My top 2 are DEATH NOTE (fucken amazing) and Serial Experiments Lain for series. Movies are GRAVE OF THE FIREFLIES (watch it, dammit), Perfect Blue, and Vampire Hunter D: Bloodlust.
Well im very picky when it comes to anime, but my favorites are Gundam, Cowboy Bebop, Macross, Hayo Miazaki films, Ghost in the Shell, Akira, Samurai 7, Planetes, and Tenchi Universe, and thats about it i think.
Thanks! LOVE Rumiko Takahashi, she's my second favorite mangaka next to Kaori Yuki. I guess I didn't include her before because I thnk of her more in terms of manga than anime. Friends have recommended Utawarerumono, but I have yet to get around to watching it. Joseph's recommendation of Hellsing is a good one too, though I was a little dissatisfied with the ending.
One anime I forgot to mention, that I just adore, is Tokyo Godfathers. It's directed by Satoshi Kon (Perfect Blue, Millenium Actress, etc), and it's sort of stands out in his work, which is so full of the psychological thrillers and mind benders, as more of a light-hearted comedy/drama, though his style definitely still comes through. Since you liked Perfect Blue, I think you might Tokyo Godfathers too.
BTW, just for your files, lolicon and shouta are popular anime fetish scenarios where an adult has a sexual relationship with a child (lolicon for girls, shouta for boys). It personally squicks me out a bit, but apparently its quite popular in Japan.
A few more recommendations of good anime I've seen: Lovely Complex, Ninja Scroll, Mahou Sensei Negima, Azumanga Daioh, DNAngel, Neon Genesis Evangelion, Chobits, Gankutsuo:The Count of Monte Cristo, His and Her Circumstances, Wallflower, Boogiepop Phantom, and Celestial Legend Ceres.
I've also heard excellent things about MushiShi, Gantz, Afro Samuri and The Melancholy of Haruhi Suzumiya.
Curious - have you seen the Dragonball series? Because I tried to watch them, but they just took to long for my taste - you know the old joke, 'How many DBZ characters does it take to change a light bulb?' - 'Only one, but it takes him four episodes to do it.' Har har XD Do you have an opinion on it?

For me, anything by Satoshi Kon, Katsushiro Otomo or Hayao Miyazaki, especially Millenium Actress, Perfect Blue, Akira, Spirited Away and Princess Mononoke.
You gotta love the classics, of course: Ranma, InuYasha, GTO, Gravitation, Serial Experiment Lain, Love Hina, Ah My Goddess, Cowboy Bebop, Trigun, Peach Girl.
I also like some of the new stuff that's come out: Ouran High School Host Club, Black Blood Brothers, So Long Mr. Despair, Rozen Maiden, Pretear:The New Legend of Snow White, Hell Girl, Otogi Zoushi, Last Exile, Naruto, Bleach.
Angel Sanctuary was a spectacular manga, but the anime is a bit stilted - READ THE MANGA! JUST DO IT! (You'll thank me).
Another anime that I watch again and again is Ai no Kusabi. Like a gay "Romeo and Juliet", extremely erotic without being vulgar, it's a true classic. A lot of people can't get past the gay sex scenes, but if you don't mind that sort of thing, and like a good tragic romance, it's a must see!
While I'm on the subject, Bible Black is the best hentai I've seen. It's pretty graphic, but it's got a good storyline. If you're interested in that sort of thing, it's a good one to see.
Not a big fan, but I just recently saw some Hellsing, and loved it. I was kinda turned off of anime due to a pal's obsession with lolicon. Sick puppy, but who am I to be judgmental? (deviant)
Vampire Hunter D: Bloodlust is the only one I have seen and it is awesome. I usually don't like anime all that much (well, I do but I have my types). I like Princess Mononoke, Hals Moving Castle, Vampire Hunter D: Bloodlust, and Cowboy Bebop (the series AND the movie were sweet).
